I love a nice, fresh, crusty roll, packed with salady (yes, I’m making up words) goodness. So after buying some very nice looking pane di casa rolls this morning, it seemed like just the right thing for lunch. To make it a little bit different, I decided to quickly make a spread from mashed white beans, and add that to it as well.
It’s really easy. Just drain and rinse a tin of white beans, I used cannellini, then mash them with a fork. Add a drizzle of olive oil to make it a bit smoother and then add some onion, garlic, salt and pepper to taste and mix it all through. You could use spring onions or some finely diced or minced onion, whatever you have and like. Use as much or as little of each ingredient as you like. Some fresh herbs and lemon juice would work well with it too I think. The flavour is subtle but it makes a nice addition. We had it with avocado, tomato, carrot, beetroot, spinach and rocket.
This would also be great on toast, or a melt with some vegan cheese. You could use it as a dip too.
