1 medium zucchini, cubed
2 medium eggplant (the long thin type), cubed
7-8 button mushrooms, chopped
1 small green capsicum, chopped
2 medium tomatoes, chopped
½ cup Egyptian dukkah
olive oil to coat
Preheat the oven to 200°C. Chop the vegetables and place them in a bowl. Add enough olive oil to coat the vegetables and mix thoroughly to coat. Next add the dukkah a bit at a time and stir thoroughly to coat the vegetables in the mixture. Transfer the vegetables into a greased baking dish and cook for about 30 mins until everything is cooked.
