Slow Cooked Egyptian Ful Medames

Ful Medames

Ingredients

2 cups broadbeans (fava) – fresh, frozen or canned
1 cup whole red lentils
¼ cup lemon juice
¼ cup olive oil
4 cloves garlic, smashed
2 tsp cumin
1 tsp paprika
2 – 2 ½ cups water or stock
2-3 tbsp chopped parsley
salt and pepper to taste

In your slow cooker, mix together the lemon juice, olive oil and garlic, just to blend the flavours. Next add the spices, a little salt & pepper, and mix together. Finally add the broadbeans, lentil and water and cook for about 6 hours. Once it’s done, stir through the parsley. Serve with salad and lightly toasted pita bread.
