This is quite strong, so you might want to cut back on the pepper to suit your taste.
500g tofu ( or tempeh, or suitable vegetables e.g. eggplant, zucchini)
1 tsp salt
2 tbsp pepper, ground
4 tbsp cornflour
2 tbsp polenta
Preheat oven to 200°C. Mix together the salt, pepper, cornflour and polenta. Press your tofu between paper towels to remove some of the excess water, then cut into cubes. Coat the tofu in the salt & pepper mix, then place the pieces on a lined and oiled baking tray. Place in the oven and cook for 10 minutes. Turn the pieces and cook for a further 5-10 minutes until they’re crunchy and cooked. Enjoy while they’re hot.
