Malaysian root vegetables with peanut sauce

Malaysian root vegetables with peanut sauce

Ingredients

peanut oil
coconut oil
2 sweet potatoes, cubed
4 medium potatoes, cubed
½ green capsicum, diced
1 tsp curry powder
1 tsp ground coriander
½ tsp cumin
1 ½ tsp light soy sauce
1-2 cups peanut sauce

Steam the potato and sweet potato until just tender, but firm. Transfer into a bowl and add some peanut oil, stirring well to coat. Next add the spices, stirring to coat the vegetables, and finally the soy sauce.

Heat some coconut oil in a pan and add the steamed vegetables and capsicum. Cook until they’re nicely browned. Serve on rice, topped with peanut sauce.
