Ingredients
1 ½ cups rolled oats
1 ½ cups sunflower seeds
½ cup chia seeds
1 cup desiccated coconut
¾ cups coconut sugar, or brown sugar
¾ cup cocoa
100g vegan margarine
150g vegan dark chocolate
2 tsp vanilla paste
Put the oats and sunflower seeds into a food processor and process into crumbs, it doesn’t matter if there are a few chunks. Transfer into a bowl and add the chia seeds, coconut, sugar and cocoa, mixing together well. Melt the margarine and chocolate together, add the vanilla paste to that and then add to the dry ingredients. Mix together really well. If it’s a bit dry add a little water or soy milk – only tiny bits at a time. You want a moist but firm mixture. Take a spoonful at a time and roll into balls, then coat in extra coconut, sprinkles, nuts or whatever you fancy. Put in the fridge to set for a couple of hours. Eat.
Makes approx 35 balls.
