Recipe for cooler weather – German lentil soup

We’re just starting to feel the first touches of Autumn here. The nights and mornings are getting cooler, though the days are still warm.

So my mind is turning towards some wonderful winter comfort foods, and reminiscing about some of the foods we discovered on our international food journey last year. What’s in your lunch box?

Do you take your lunch to work?

If so, what do you like to take? Over the weekend I like to do a little bit of ‘work lunch’ food preparation for the week ahead. Sometimes it’s a simple as making sure we have a variety of fillings and enough bread in the freezer to make sandwiches. Sometimes it’s salads or sushi or rice paper rolls or roast vegetables. It just depends on how I feel and what we’ve got.

Today it was salads. I had some leftover rice in the fridge from dinner last night, so I decided to make a rice salad, and then a mixed bean salad for a little variety. I usually try to make a couple of different things. So come morning all I have to do is put some salads in a lunch box, maybe add some leafy greens and chopped tomato and we’ve got healthy, cheap and filling lunches. Read More →

Savoury French toast

I don’t know why, but French toast popped into my head the other day.

I’ve only ever had French toast once, in my pre-vegan days, and while it was yummy, I prefer savoury to sweet. So I decided to experiment. The first time I made some for a weekend lunch, and despite some equipment failure it worked out really well.

The batter itself it quite simple, just ground flax seeds and non-dairy milk. Then it’s really up to your taste buds as to what flavours you might like to add. Soak each slice of bread in the batter for a few seconds on each side – the thicker and drier the bread the longer you’ll want to soak it. Read More →
