Do you take your lunch to work?
If so, what do you like to take? Over the weekend I like to do a little bit of ‘work lunch’ food preparation for the week ahead. Sometimes it’s a simple as making sure we have a variety of fillings and enough bread in the freezer to make sandwiches. Sometimes it’s salads or sushi or rice paper rolls or roast vegetables. It just depends on how I feel and what we’ve got.
Today it was salads. I had some leftover rice in the fridge from dinner last night, so I decided to make a rice salad, and then a mixed bean salad for a little variety. I usually try to make a couple of different things.
