It was a cooler day and I was craving some comfort food. I felt like something quite simple with a little bit of bite. A little bit sour, a little bit hot, and using what I had on hand.
And so, this chickpea and vegetable stoup was born. The vinegar adds a little sourness and the paprika adds a bit of spice. What’s a stoup? It’s a bit thick to be a soup but a bit thin to be a stew. Put stew and soup together, and you get stoup. We started using the term stoup quite a few years ago now. I know I’m not the only person who makes up words, and since then I have actually come across this one elsewhere!
A bowl of this served over some brown rice is really filling, and good for you too!
