Ingredients
500g green beans, topped, tailed and chopped into long pieces
1 onion, large dice
2 cloves garlic, chopped
1 tsp ground ginger
2 curry leaves
1 tin diced tomatoes
1 tsp sambal oeleck
1 tsp sugar
200ml coconut milk
salt to taste
oil for cooking
Heat some oil in a pot and fry the onion, garlic, curry leaves and sambal oeleck until just cooked. Add the beans and tomatoes and cook for a few minutes then add the coconut milk and simmer for 15-20 minutes. Add sugar and salt to taste. Serve.
