2-3 tomatoes, chopped into chunks
300g mushrooms thickly sliced or cut into chunks
1 tsp cumin
1 tsp coriander
½ tsp chilli
½ tsp paprika
½ tsp cinnamon
½ tsp ground ginger
1 tsp black pepper
1 tsp salt
juice of ½ lemon, about 1 ½ tbsp
Chop the mushroom and tomatoes into bite sized pieces, put them in a bowl and toss with enough olive oil to coat is all. In a small dish mix together the spices and lemon juice, then add to the vegetables and stir through until everything is coated. Then transfer to a baking dish.
Cook at 180°C for 20-30 minutes.
