If you’re like me then you don’t always feel like cooking, but you might not want to buy dinner either.
Sometimes you just want to make something that’s quick, easy, satisfying and you can throw together without really thinking. The thing that all of these meals seem to have in common is that there are endless variations, so can be made using whatever you like and have on hand.
My top 5 dishes (in no particular order):
- Tofu scramble
- Vegie burger
- Pesto pasta
- Pita bread pizza
I just can’t go past tofu scramble. It’s healthy and delicious, plus it can be made it a myriad of ways that taste completely different. If we go out to eat somewhere that has tofu scramble on the menu I can pretty much guarantee you that is what I’ll order. At home I have my favourite methods, but really you can throw in whatever you happen to have on hand.
So many ways to dhal, and all of them delicious. I haven’t yet met a dhal I didn’t like. I do love that a pot of lentils cooked with some spices and served with rice can be a fantastic meal on its own. Or have it with another curry, or some roast vegies, or even with chips.
I always have some vegie patties in the freezer, either home-made or store-bought. Cook up a pattie with some mushrooms & onions then throw it on a roll or between and couple of slices of bread with a bit of salad and the sauce of your choice, and hey presto, you’ll be scoffing it down in no time!
I’ve shared a couple of simple pesto pasta recipes in the past, and it really is a super quick way to make a delicious pasta dish. Pasta and pesto it can really just be that simple. Add and your choice of vegies or not, make it a bit creamy or not.
Pita bread pizza
Another thing I always have in the freezer is some pita bread. That way whenever the mood takes us pita bread pizza can be on the menu. Sometimes I make it like a ‘traditional’ pizza, with sauce and toppings. Sometimes I’ll use a yummy spread or dip as the sauce and maybe pile some salad on top.
