500g green beans, topped and tailed
1 onion, large dice
2 tomatoes, chopped
1/3 cup olive oil
2 cloves garlic, finely chopped
½ tsp Lebanese 7 spice
pinch of salt (to taste)
In a medium sized saucepan, sauté the onion and garlic in the olive oil for about 10 minutes over a low to medium heat. Next add the green beans, tomatoes, salt and half of the 7 spice mix. Mix well, cover and lower the heat to a gentle simmer for about 40 minutes, stirring occasionally.
Once cooked, the green beans will turn a darker colour. Add the remaining 7 spices mix just before serving.
Serve hot or cold.
