Vegie in the Kitchen is all about sharing our culinary adventures with you. I don’t make anything too fiddly or time-consuming and mostly use easy to find everyday ingredients. However, I do love to experiment and try new things! Along with recipes and a little nutritional information, I also hope to share with you things that inspire and surprise, plus some handy tips. There was a time not too long ago when I’d lost my cooking mojo. It was a chore, not a pleasure to spend time in the kitchen. Gone was experimenting and trying new things, I was in a rut preparing the same few meals over and over again – when I could be bothered cooking at all. Mostly it was my partner Steve doing the cooking.
In early 2014, I quit my job, we sold our house, packed up our stuff, and with the furkids in tow relocated to the beautiful Northern Rivers region of NSW. I decided then it was time to rediscover my love of cooking and started a blog to help me on my way. It worked! I’m enjoying cooking again, and excited to try new things.
Having reignited my love of cooking, we decided to set off on a world culinary adventure, in our own kitchen. Each month in 2015 we’ve been explored the cuisine of a different country or region. It was an amazing voyage of discovery, and we learned a lot. Now, in 2016 I hope to keep learning new things and sharing them with you.
One of my all time favourite dishes is tofu scramble. I was hooked the first time I tried it. Not only is it perfect for breakfast, lunch or dinner, but it can be made in so many different ways – the options are almost endless! Soft or firm tofu for different consistencies, black salt if you want an eggy flavour, savoury yeast flakes, plus a mix of herbs, spices, seasonings and vegetables to suit your tastes. There are no rules. Yum, I could eat some right now!
